Ingredients :
60 ml Peruvian Pisco
30 ml fresh lime juice
20 ml cane sugar syrup
1 egg white
A few drops of cinnamon bitters (optional)
Ice cubes
Lime slices for decoration
Instructions :
Pour the Pisco, lime juice, cane sugar syrup and egg white into a cocktail shaker.
Add a few ice cubes to the shaker.
Shake vigorously for about 15-20 seconds to mix the ingredients and create a light froth.
Strain the mixture through a fine sieve into a cocktail glass to remove the ice cubes and chunks of ice.
If you wish, add a few drops of cinnamon bitters to the foam for decoration.
Garnish the rim of the glass with a slice of lime and serve immediately.
